{bake} chicken sausage rolls

Saturday is baking day at our house, and this week we were inspired by our friend Jacq who makes sausage rolls for her boys to take to school for lunch. We made up the recipe as we went along and they turned out pretty yummy so I thought I'd share!
 

Yummy chicken sausage rolls by Indigo Collier
(makes 20)

ingredients
500g chicken mince
2 carrots, grated
1/2 zucchini, grated
1 onion, finely chopped
1 clove garlic, crushed
2T Italian herbs
1/2C parmesan cheese
Salt & Pepper
5 sheets puff pastry
1 egg, mixed

directions
1. Preheat oven to 200C
2. Lay puff pastry sheets out to thaw
3. Combine chicken mince, carrots, zucchini, onion, garlic, Italian herbs and parmesan cheese in a bowl. Mix well.
4. Cut pastry into four, so there are four smaller squares per sheet
5. Distribute mixture evenly between each square, placing it in a sausage shape across the middle of each square
6. Line baking tray with baking paper.
6. Begin to roll each sausage roll, brushing a little egg along the closing edge.
7.  Place the sauage rolls onto the baking tray, sealed edge down, remembering to leave a little space between each to allow for rising.
8. Brush the top of each sausage roll with the egg mixture.
9. Place the tray in the oven, and bake for 40-50 minutes or until golden brown.

Enjoy right away or pop into the freezer to take for lunch throughout the week :)
